Superstar Remmi Smith cooks up apples for fall!

What’s the best way to bring in the fall season? With apples, of course! If you missed it, we did a blog earlier in the month on apple recipes, but we thought we’d circle back with our resident healthy cooking expert, Remmi Smith from Cook Time with Remmi! Check out her latest post here!

Hi fans of Ask.Listen.Learn! I‘m Chef Remmi of Cook Time with Remmi and I’m so excited to share some of my favorite healthy recipes. Well the fall season is upon us and apples are in season. Today I am going to share with you some of my favorite recipes with apples as one of the main flavors that make the dish special and taste great! I will also share some fun food facts and food history…I love food and I love reading about food too! Did you know the reason apples float in water is because their volume is 25% air? I start with my “Cornbread Dressing with Apples”, then I make a great coleslaw, and then I finish up with “Chicken Curry Soup with Apples.” Watch the video to learn how to make these great dishes! And I have listed the recipe instructions below.

CORNBREAD DRESSING WITH APPLES

Ingredients:
4 C Cornbread (cut in cubes)
2 C Bread (cut in cubes)
1 Lb Sausage (cooked and drained)
1 C Cranberries
½ C Onion (small dice)
½ C Celery (sliced)
1 Apple (medium dice)
2 t Thyme
1 C Chicken broth
2 T Olive oil
Salt and pepper to taste

Directions:
Slice cornbread into large croutons. Place on baking sheet and put in 350 degrees oven for 15 minutes until crispy. In medium pan heat the olive oil and sauté onions and celery for 3 minutes. Add apples and cranberries to the pan and sauté for 3 more minutes. Add salt pepper, thyme, and chicken broth and simmer for 10 minutes. In a large mixing bowl, add croutons, cooked sausage, and sauté mixture and mix until moistened. Place dressing in a large casserole dish, cover with foil and bake at 350 degrees for 30 minutes.

APPLE COLESLAW

Ingredients:
4 C Cabbage(shredded thin)
¼ C Green onions(sliced)
1 Apple(medium dice)
¼ C Canola oil
2 T Apple cider vinegar
2 T Cilantro
Salt and pepper to taste

Directions:
Prepare ingredients as directed. Mix the oil and vinegar in a small bowl and set aside. In medium bowl toss the remaining ingredients with the dressing mixture.

TURKEY CURRY SOUP

Ingredients:
¼ Olive oil
1 Onion(medium/sliced)
1 Celery(sliced)
¼ C FLOUR
4 C Chicken broth
2 Carrots(sliced)
2 C Turkey(diced)
1 Can diced tomatoes
2 t Curry powder
1 Apple(large/medium dice)
Salt and pepper to taste
¼ C Fresh parsley
½ C Plain yogurt

Directions:
Prepare vegetables as directed. In large pan sauté onions and celery in the oil for 3 minutes. Add the flour and gradually add the chicken broth. Bring to a boil and then turn to simmer. Add carrots, turkey, tomatoes, curry powder, apple and salt and pepper. Simmer until the carrots are tender. Serve with parsley and yogurt as a garnish.
